1. Traditional Ukrainian borscht

This borscht is a classic that is known and loved in every corner of Ukraine.

Ingredients:

  • Pork (on the bone) - 500 g

  • Beet - 2 pcs.

  • Potatoes — 3-4 pcs.

  • White cabbage - 300 g

  • Carrot - 1 pc.

  • Onion - 1 pc.

  • Tomatoes or tomato paste - 2 tbsp. l.

  • Garlic - 2 cloves

  • Bay leaf - 2 pcs.

  • Salt, pepper, herbs - to taste

  • Sour cream for serving

Instruction:

  1. Boil the broth. Boil the pork in 2.5 liters of water for 1.5 hours. Remove the foam.

  2. Prepare the dressing. Grate the beets on a coarse grater, stew with tomato paste for 10 minutes.

  3. Add vegetables. Put cubed potatoes and finely chopped cabbage in the broth.

  4. Sauté carrots and onions. Add them to the borscht along with the beetroot dressing.

  5. Add spices. Put the bay leaf, chopped garlic and greens.

  6. Serve. Serve borscht with sour cream and brown bread.

2. Poltava borscht with dumplings

The specialty of this recipe is dumplings, which add richness to the dish.

Ingredients:

  • Chicken - 500 g

  • Potatoes - 4 pcs.

  • Beet - 2 pcs.

  • Carrot - 1 pc.

  • Onion - 1 pc.

  • Cabbage - 300 g

  • Flour - 1 cup

  • Egg - 1 pc.

  • Water - 100 ml

  • Salt, pepper - to taste

Instruction:

  1. Boil the broth. Boil the chicken in 2.5 liters of water until cooked.

  2. Add vegetables. Cut potatoes, beets, cabbage and add to the broth.

  3. Prepare dumplings. Mix flour, egg, water and a pinch of salt. Spoon the dough into the boiling borscht.

  4. Sauté carrots and onions. Add to borscht.

  5. Serve. Serve the borscht hot, garnished with greens.

3. Galician borscht with beans

This borscht has a rich taste thanks to the addition of beans.

Ingredients:

  • Veal - 400 g

  • Beans - 150 g

  • Beet - 2 pcs.

  • Carrot - 1 pc.

  • Potatoes - 3 pcs.

  • Onion - 1 pc.

  • Cabbage - 300 g

  • Tomato paste - 2 tbsp. l.

  • Salt, pepper, bay leaf - to taste

Instruction:

  1. Prepare the beans. Soak it overnight, then cook until done.

  2. Boil the broth. Veal is boiled in 2 liters of water for about 1.5 hours.

  3. Add vegetables. Cut beets, carrots, potatoes, cabbage and add to the broth.

  4. Mix with beans. Put the boiled beans in the borscht together with the tomato paste.

  5. Add spices. Cook until done, serve hot.

4. Volyn borscht with mushrooms

This recipe adds the flavor of forest mushrooms to the borscht.

Ingredients:

  • Dried mushrooms - 100 g

  • Beet - 2 pcs.

  • Potatoes - 4 pcs.

  • Cabbage - 300 g

  • Carrot - 1 pc.

  • Onion - 1 pc.

  • Tomato paste - 2 tbsp. l.

  • Salt, pepper - to taste

Instruction:

  1. Soak the mushrooms. Soak dried mushrooms in warm water for 2 hours.

  2. Cook mushrooms. Boil mushrooms in 2 liters of water for 30 minutes.

  3. Add vegetables. Put chopped potatoes, cabbage, beets, carrots.

  4. Sauté the onion. Add sautéed onions with tomato paste.

  5. Serve. Serve the borscht hot with a spoonful of sour cream.

5. Cold borscht (summer version)

This borscht is refreshing in hot weather.

Ingredients:

  • Beet - 3 pcs.

  • Cucumber - 2 pcs.

  • Boiled eggs - 2 pcs.

  • Kefir - 1 l

  • Water - 0.5 l

  • Green onions, dill - to taste

  • Salt, pepper - to taste

Instruction:

  1. Boil the beets. Cool, grate on a coarse grater.

  2. Add water. Dilute beets with cold water and kefir.

  3. Cut the cucumber and eggs. Add to borscht.

  4. Add greens. Salt, pepper, mix thoroughly.

  5. Cool down. Serve cold, garnished with dill.
